Potato cakes & mushroom sauce

Ingredients potato cakes

  • 4 Medium sized Potatoes
  • chopped parsely
  • chopped chives
  • 1/2 onion (optional)
  • 1-2 eggs
  • 1/2 cup bread crumbs
  • ginger 1/3 thumb
  • salt

Ingredients mushroom wine sauce

  • 1 green onion
  • 6-7 medium sized mushrooms
  • 1/2 cup of white wine
  • 1.5 cups of coconut cream or regular cream

Directions for potato cakes

Peel and boil potatoes, let them cool. While potatoes are cooling, finely chop parsely and chives . Dice onions (optional). Mash potatoes, add paresely, onions, chive and salt. Grate ginger. Beat the egg in a bowl and put bread crumbs in another bowl. Grab a handful of potatoes and turn it into a patty, dip it in the egg and then in the bread crumbs. Place in a hot pan on the stove with some cooking oil (olive or coconut) and fry until it becomes a crispy golden colour.

Directions for potato cakes

loosely cut mushrooms and green onions, stir fry together add coconut cream or regular cream. Add white wine and let it simmer down to a sauce consistency and remove from heat.
